I finally was able to install windows.
1. Updated BIOS via USB (download from intel)
2. Moved the USB stick to the back top port.
It took 4 tries after that, still getting MEMORY_MANAGEMENT issues and other various errors at various stages of the process. Finally was able to get it fully installed. I am also replacing the memory with the Hyper X sticks everyone is mentioning on these forums. Those should arrive in a few days. I also have to manually download and install the network/lan port driver because windows does not recognize it and thus, no internet.
This is a very frustrating product to say the least. Could have built a nice mini atx rig but I thought this would be a time saver.
I had very similar issues and was very frustrated with the product. I did find several threads that pointed to the memory as being the issue. I bought my kit from New Egg and it even came with 8 GB of
Avexir 8GB 260-Pin DDR4 SO-DIMM DDR4 2133 (PC4 17060) Laptop Memory Model AVD4SZ121331508G-1B RAM.
The RAM did not work and caused random errors during installation. I probably tried to install 10 times. I went through this support site and found many others that have this same issue. Then I stumbled across a post that referenced Kingston Hyper X Ram as working with my nuc6i3sys. I ordered some and the install worked the very first time. The unit has been stable every since. Here are some links that should help.

There seems to be issue with the RAM and your success may vary but this worked for me so I had to share. Good luck!
The 6gen NUCs support DDR3L - DDR4 2133MHz at 1.25V (1.20V).
For me the 6gen NUCs support only DDR4-2133 1.2V SO-DIMM as stated here Intel® NUC Kit NUC6i3SYH Specifications and here Intel® NUC Kit NUC6i5SYH Specifications .The CPUs that they use can support other type of ram. What do you want to say?
@Omar777 That is exactly the ram that came free from New Egg when I ordered it. I suspected that might be the cause so I did order the hyper x ram the other day. i will confirm in a couple days when it arrives.
6gen NUCs support DDR4-2133MHz at 1.20V SO-DiMM memories; some memories work at 1.25V and they are supported too.
Intel noted a random issue with some memories, please do this workaround and keep us posted with your findings.
Go to BIOS>Advanced>Performance>Memory> and uncheck the option Round Trip Latency Optimization
