1. The OS cannot be migrated to the new SSD. You need to reinstall the OS.
2. You could break the RAID 1 and transfer files to the new SSD.
3. You keep RAID mode all the time. No need to move SATA configuration to AHCI.

So what is the method to "break" the array?
I removed 1 HDD drive and the system still boots and now simply says "RAID Degraded" in the Intel storage manager.
Should I clone now to the SSD or is there something else I should do first?
Actually, I think I misunderstood. You are saying I HAVE to install a fresh copy of Windows 10?

Well I must of got lucky
I cloned the SSD off of the single HDD in a degraded RAID I was able to boot the system up.
Unhooked the HDD and I was still up and running.
