I think no. These boards are only mounted in NUCs with CPU solded on board. If you want other similar board, I think that on market isn't mITX board with these dimensions. You can buy for example Gigabyte's mITX board, but all these mITX boards are for "desktop" CPUs, not "notebook" CPUs and contain 2 DDR4 RAM slots for full-sized RAM modules (not SO-DIMM notebook modules).
Intel has sold board only option for all previous generations of the NUCs except this latest one (6th gen). is Intel removing the board only option or do we just have to wait? If so, how long?

You are correct, for previous generations Intel had the board only option and the complete kit, for 6th Generation Nucs the options Intel has for now are only complete Kits and board only will be available for vPro* versions only.

Are Skylake CPUs on these NUC motherborads soldered on the board? Or may I replace 6i3 CPU by 6i5 CPU in future?
If I want to operate the NUC in a board only environment, would I be able to remove the board from the kit (chassis)?
rado77, they are soldered in the board and are not replaceable by the end user.
alank733, if you would like to, the board can be removed from the chassis; however it would be used out of its intended purpose and any possible damage caused by misuse could not be covered by the warranty.
