Does the Intel® Desktop Board DZ87KLT-75K support NVMe?

If my Z87 motherboard does not support NVMe do I lose any speed on the SSD or do I just lose the ability to boot from the drive?

The answer to the first question is Yes. In a system supporting NVMe, the SSD can utilize up to four PCIe Lanes for data transfers, which means that the potential throughput is way beyond that possible with a single SATA lane. As for the second question, it depends upon whether the card (I am presuming you are talking about an SSD card that plugs into a PCIe x4+ slot) includes an Option ROM that presents the BIOS with a boot device support driver (most I have seen do not)
