NUCs are low power PCs, the video capabilities might not meet the minimum requirements of the game. According to Microsoft Windows® recommendations it is necessary at least 2GB of memory dedicated.
I recommend you to update the operating system, BIOS and drivers then, try again.

I never said I was willing to play in Ultra.
Full HD with settings on medium would be fine.

NUCs are an excellent product for basic and mid-load applications for home and business.
The minimum specs for that game I believe are:
- OS: Windows 7 64bit
- Processor: Intel Core i3-2100 or AMD equivalent
- Memory: 6 GB RAM
- Graphics: NVIDIA GTX 650 2GB or AMD HD7770 2GB
- DirectX: Version 11
- Storage: 25 GB available space
So you may struggle to run the game even at low settings due to the requirements for 2GB on the Graphics.
NUCs have the option to share a maximum of 1GB of memory for video; that’s why your game is telling you the NUC does not meet the minimum requirements. Even, Intel® Core™ i7 processors (6th gen desktop) share a maximum of 1.7GB.
Your game requires a dedicated graphics card.
