When you say black you mean just the background? I ask as you say you are able to get to the device manager to disable the driver.
I have the same NUC and I originally installed Win10Pro also, I had the problem where the background would disappear and go black pretty regular, if I would start the task manager and restart explorer I would get my background back, there was a couple other odd things that happen with Win10Pro. I ended up uninstalling it and going back to Win7Pro for now, which is unfortunate as Win10Pro has some features I really like.
I got tired of having to restart explorer to get me background and icons back.
Not that Windows 7 is without issues; I have never been able to get my Bluetooth mouse and keyboard to work, they show up and pair just fine, but once paired they grey out. They worked perfect in Win10Pro
So I have to guess that the problem in with Win10Pro and the way it uses the video drivers as I have NO Problems with the i7 Nuc and Windows 7.

I would like to verify if you are using the driver below.
There are drivers for the NUC and for computers using 5th gen processors; The correct drivers to use would be for the NUC.

Thanks for the reply! I discovered that the HDMI mini adapter was actually the issue. I took the HDMI adaptor out of the mix, bought a new cable(mini to regular) and re-installed Windows 10 pro. My Nuc is now working! Thanks again for your help.
