Take a look at the Shield Testing Report you will see in there all the shields that have been officially tested.
In the link you posted, I couldn’t see the name and the ICs of all the modules/shields.
You shouldn’t have problems with that kit but if you have, the problem could be with the libraries. The kit in the link, is for Arduino and I’m guessing that some of those devices use libraries for AVR/Arduino and not for x86/Galileo. Some of the libraries might work but some of them may not so you will need to modify the library or create your own one.
Have you check the kits in: IoT - Just add Inspiration
