I double checked NUC documentation and this is the first time that we have this issue. I performed a test with this NUC, SA number H26998-401, latest BIOS version and I can see the option.
Please reinstall the BIOS version; use BIOS Recovery option.

I just noticed we are using a customized BIOS from the distributor, with a customized logo...
The problem may come from it ?
I flash the NUC using bios from Intel website (v44 or v43), BIOS version change but the distributor logo still appear
Is there some hidden parameters like the logo ?
An Integrator can use Intel Integrator Toolkit (ITK) to produce a custom BIOS update that locks and hides particular BIOS options so that their settings cannot be changed. This can be done in tandem with or totally separate from the inclusion of a custom logo (splash screen).
If a custom logo has been installed, it will persist across subsequent BIOS updates. The only way to remove a custom logo is by creating and installing a custom BIOS update that replaces it with a custom logo of your own. You can download ITK through the Download Center and use it to produce such custom BIOS updates.
