What is your wireless adapter?
Did you buy this NUC with the wireless adapter already installed or did you install it later?
I bought it with the already installed adapter. It should be Intel Wireless-AC 7265.
Looking at this issue, it may be related to the Windows* Update process and it might be helpful to check with Microsoft*. On our support page: Intel® Download Center we have the latest driver (18.12.1) for the Intel® Dual Band Wireless-AC 7265. Please, before you installing the latest driver, make sure you have the Intel® Dual Band Wireless-AC 7265 as you've mentioned it should be. Once you have installed, check if you can now see the missing options.
I'm having the exact same issue with my Intel NUC5i7RYH. I have a support ticket with Intel and the next step in that case we are going to have a remote session so I can show Intel the problem and not only via screenshots.
