Take a look at this guide: IoT - Setting up Eclipse | Intel® Developer Zone after running devkit-launcher you should click on Create C/C++ IoT Project.
Or you can click on Help > Intel® IoT Developer Kit.
Let me know if you are able to see what the tutorial shows in the images.
I were able to get a PC with Linux and tried this, yes I'm not able to see those options either. But, I'm able to see the examples that come in the IDE.
One thing you can do is go to Window> Show View > Project Explorer you should see the different codes in your screen.
In order to connect your board to the IDE, you can do it with the Remote System. Even if it say Galileo you must check the IP address, then you can change or keep the name of the device. Galileo is the name that comes as default.
