Was your NUC working with previous BIOS?
You may need to roll back to BIOS version 0030

Also, make sure to get latest LAN drivers
As it turns out, Intel pushed out a bios update a day after I update to 0030, so I thought I was on the latest. I am going to try updating to the current one to see if it resolves my problem.
I would like to post an update on this issue.
Updating to BIOS 0032 & updating the network drivers to the latest November release, fixed the issue for me.
