My use-case has an existing 12VDC Power supply with excess capacity. It would be a shame if I had to add another 19V power supply.
Osopolare, I just received a response from engineering, and they suggested to follow the information provided on the TPS of the NUC and what is stipulated on it.

You are free to try to use a regular 12V power supply, but Intel won’t be responsible of the results or the behavior of the NUC.
