Hello Andycreator I am sorry to hear you are having problems with your NUC.
There are some reports from customers saying that this specific NUC does not work with Crucial Memory. They have been able to resolve this behavior by using a Kingston memory.

There are some steps you can try:
1. Clear the CMOS/default settings in Bios by pressing F9 under the Bios.
2. If possible test a different RAM stick.
Andy it is necessary to have at least 1 memory stick on the NUC in order to access BIOS or Boot to the operating system.
