If what you are looking for is to see more compilation messages, maybe the “show verbose output” option might be what you are looking for.
I meant something else. Usually one compiles using the option fno-stack-protector, as
gcc -fno-stack-protector program.c
in order to disable stack protector.

I meant the environment in which you develop your code for Galileo. I believe the current version is 1.5.3.
I usually compile the programs inside this environment. However, I don't know of a way to specify the flags, such as fno-stack-protector.
I don't think there's a way to do this in the IDE directly, but you can first to find the script it runs when compiling or look into the toolchain directories themselves, which are under arduino-1.5.3\hardware. Sorry for not being more precise, just don't have time to dig into this right now, but hopefully the direction will be good enough for you
