Have you updated the BIOS? The latest BIOS should resolve this issue for most monitors.

It worked! Can't believe it was as simple as that, I thought it was the RAM, even the store I bought it from said that's just how NUC is, but in the end, it was just the BIOS. Thanks so much Jason!
