I see the picture with the option to create RAID 5 as grey out. Have in mind that Intel onboard RAID controller has a limitation of 2TB per volume as bootable.
At BIOS level, you need to enable UEFI, then try again.
Reply back with information of the system report generated within Rapid Storage software.

I enabled UEFI in BIOS and though the drives are visible in the system view, it won't allow me to create any sort of RAID (0/1/5/10) with those volumes. It will only let me include my SSD and secondary application drive. Is there something else that I'm missing? Windows will let me create a 1 or 0 RAID in Disk Management, but IRST is giving me no love.
Take a picture of the option ROM while booting the computer by pressing CTRL + I keys and send me the system report generated within Intel Rapid software.
Open the Intel Rapid Storage Technology user interface (Start » Programs » Intel » Intel® Rapid Storage Technology).
Click the Help icon.
Click the System Report icon.
