I have Windows 8.1 and I mounted a RAID 0 with two drives HDD. I have an Intel SSD for the OS. The RAID 0 is for video editing.
I have the Gigabyte mother board - GA - X 48-DQ6
I'd like to know whether or not to update the drivers for the Chipset for Windows 8.1.
I'd like to know how we must proceed to mount a RAID 0 in a simple way without the need to reinstall the operating system.

You can update the chipset driver at any time since this will not affect at all the RAID volume you have.
In the other hand, you can use the Intel® Rapid Storage Technology to add an additional drive to the RAID array but this cannot be performed with a System Disk (driver with OS inside). You can add disk with no information, format or OS only.
