I've just uploaded a .PDF with Windows installation instructions - you can use either a USB optical drive or a USB flash drive. The optical drive method is quicker and simpler.
In regards to setting up dual monitors, you can use an HDMI-to-DVI adapter (like the one at http://www.amazon.com/HDMI-Adapter-Plated-Connector-Female/dp/B000FUVNX8). Connect to both monitors and then configure them as you need in Windows using the Intel Graphics utility or the Windows-based one.
