CPU fan control of DZ68BC (and others)?

Are we really supposed to have any definitive control over PWM-style CPU fans (4-pin plugged to the motherboard), whether stock or aftermarket, with this BIOS?

I've been all over the Fan Control and Real-Time monitoring section but can't figure it out.

You can set temperature thresholds, responsiveness/damping (so that the fan doesn't react to every little CPU spike--it helps very little), and something called a duty cycle, but that's about it that I can see.

Let's say you wanted to set it at the lowest available speed per whatever your fan supports, or another particular speed. How?

Or you didn't want it to change speeds at all.

I'm sure someone has figure this stuff out.
