I'll answer my own question. Past experience shows that might be the best I could hope for.
According to this article (which I only found as a result of a link that came up when viewing my question), there are two latching and 4 UV-reflective cables included. No other differences.

The problem with what Intel says at your link is that, unless I'm misunderstanding the word, the reflective cables are also latching. I can confirm that they're SATA3 cables though, since the BIOS reports 6Gb/s for my SSD. I think it's a strong bet that the red ones are, too, since it would be crazy for Intel to include anything else.
