In regards your beeps question is totally normal and, thus, expected to hear two beeps during boot-up. The first beep means that the processor initialization has been competed , while the second beep means that POST is complete, for more information check page 75 of the technical product specification (TPS)

If you update the BIOS you can resolve "monitor not found" error mesage.
Regards to two beeps in this board its normal you will get one beep when completing the post , one when system started to boot.

As for updating the BIOS, should I bother doing that to fix the "monitor not found" error? I have been reading stories where people tried to update the BIOS and that pretty much killed their motherboard. Should I go ahead with the BIOS update using the recommended Windows EXE way? Will it fix or improve performance of the board with a BIOS update besides the monitor error?
I am currently running version 0019.
If I do need to upgrade, should I upgrade to the next version and work my way up to 0031 or can I just upgrade to 0031 from where I am at?
You can update the BIOS directly to 0035 which is the latest version.
If you have any problem after updating BIOS, you can revert back to the old one.
To revert back only thing you need to do use download the .exe BIOS file fo the olde version and run from windows...
