In my opinion, if your NUC is working with Linux that means that there are no problem with the hardware. Although you didn't given a P/N of your RAM memory (only general description), since it is working with Ubuntu, I'm assuming that is compatible memory (with 4Gbit density - like this one: KVR16LS11/4). I believe that there some thing wrong in Windows 10 installation. Here you will find tutorial how to install Windows 10 (you shall choose the UEFI option): Windows 10 Forums .
In addition you shall update your BIOS to the latest version and install the drivers downloaded from here: Downloads for Intel® NUC Kit NUC6CAYH

I followed the guide but unfortunately the issue has not been solved. The NUC is freezing after 10 minutes (or less) of functioning.
BTW the part number of the RAM is exactly that of your example (KVR16LS11/4)
Try to perform Clean Boot in Windows:Windows 10 Forums . In this tutorial you may find instructions how to debug if there is an application that is freezing you task bar. See an example here: Windows 10 Forums . If you have Antivirus installed, I'll start from uninstalling antivirus application and trying how Windows is working with Windows Defender - ON.
Sorry for the late reply but it took some time to try all the steps, also because the NUC is not mine but my parents’. Unfortunately also the clean boot did not have any effect. It seems strange to me that I’m the only one having such an issue with Windows Creators fall edition. I think I will send back the product and buy a different one. Furthermore the intel download center seems down and cannot download the last bios update. That’s delusional... I will go for an AMD.
