I understand that you want to check the version number of the driver for the Intel® Wireless Technology in your Intel® NUC Kit NUC6CAYH.
In the Intel® Drivers & Software web page, you can see that the number of the latest driver version is 20.0.2. However, if the system is using Windows® 10 and if the NUC device has an Intel® Wireless-AC 3168 + BT 4.2 (which is your case), the version number in the system will change into 18.104.22.168 .
This does not mean that this a different driver. This is the exact same driver. The only difference is how the system recognizes it.
