I am sorry to hear you are having memory issues with your Intel® NUC.
I would recommend testing the RAM in a different system or to test different RAM on the Intel® NUC.
If the Intel® NUC reads 4GB instead of 8GB on both slots, this could be certainly a compatibility issue or a bad memory module. You can check the following link for further information:

I did not yet have a chance to try another memory stick, and it seems that I don't have anything from the tested modules available for purchase locally. So it's where it was originally: 4GB instead of 8GB and I will try another stick later this week. Thanks!
Finally I managed to check a different RAM stick, which is TED48G2133C15-S01, Team Elite 8GB 260-Pin DDR4 SO-DIMM DDR4 2133 (PC4 17000) Laptop Memory Model .
Detected as 8 GB, it seems to be working well.
