In regard to your inquiry, if the Intel® compute stick is not booting to Windows, then unfortunately there will be no option to back up the data from it, unless it was saved on the SD card.
Not sure if this is the option you already tried, but we can try to do a OS recovery on the stick:

If the problem persists after that, then a replacement of the stick will be needed, if it is still under the one year of warranty. However, the data will be lost in that case.
