I will appreciate if you could reply with the following information:
What application or where are you seeing this temperature?
Are you getting and overheating warnings or does your system shut down?
What operating system are you using?
Would you please post you memory part number?
Are you using the onboard video or a video card?
Do you have the latest BIOS version for your motherboard? If not, I suggest getting the latest BIOS version from your computer manufacturer website and to update the BIOS.

I'm using HWmonitor to see the heat of my CPU
And my BIOS is up to date.
I ran the Intel Processor Diagnostic Tool without issues.
Note that i never overclocked my CPU but it runs at 4.5Ghz Sometimes when i'm rendering
Also should i make a stress test like OCCT ?

That frequency is fine, 4.50 GHz when rendering, you can check this processor specifications here:
Now, does you system cashes when you experience this temperature or does your system performance go down, is slow or shuts down?
Usually, if you are experiencing high temperature the computer shuts down or reboots if it senses an overheating issue to prevent damage to components, The BIOS usually reports if a thermal event has occurred. If you don’t get any of these warnings you should be ok.
Under normal working conditions, if all fans are functioning and the CPU still overheats, replace the thermal interface material (TIM) between the heatsink and processor. The TIM eventually hardens on most systems.
Purchase professional grade TIM and replace it yourself. Carefully follow all instructions and warnings. See How to apply Thermal Interface Material (TIM).

When i hits 100 degres it does not shut down or slows down but the cpu should do it if it hits 100 degres so maybe it's just the thermal sensor ?
would you recommend me to replace my huge aircooling by some water cooling ?
Under normal condition it stay between 35-45 degres celsius so it's probably not the TIM eventhough i have bought an extra in case i need it.
To isolate the issue it will be great to test different heat sink but it will be up to you if you prefer to buy water cooling, you can try a liquid cooler and if the problem persists and you are not happy with it, you can contact support to ask for warranty validation options.
The issue has no been resoleved but you told me if it don't shut down my computer it's fine so it's alright for me ^^

so it wasn't really a problem
