The latest Galileo image (which can be downloaded from https://software.intel.com/en-us/iot/hardware/galileo/downloads) includes the UVC driver, so as long as you are working with a UVC compatible camera, you will be able to interact with your camera using your Galileo. You can check that your camera is being detected with the command ls /dev/video*.

Now that you know that your camera is compatible with Galileo, then you can start programming for it. Since you are trying to create a C script you will be able to find many examples on the web, for example:
