I am sure though there are ways to make it work. on them. Maybe someone around here has done and cant point you in teh right direction.

As for Windows Server 2003 and Windows Server 2008, I must bring this into your notice that since these are Server based OS, they are designed to work with Server CPUs and Motherboards typically unless and otherwise stated. As the above mentioned URL states "Intel® Desktop Boards do not currently support Microsoft Windows Server 2003 or 2008*. There are no plans for making drivers available for this operating system."
However for the Server Motherboards, I can give you recommendations provided your budget and limitations along with your intended usage environment. We always advise our users to refer to THOL (Tested Hardware and OS List) before purchase of any Motherboard, CPU or any other hardware component, in the THOL you will find a complete list of Tested and Verified OS that Intel advises and guarantees full support on.
