the NUC would be a Thin Canyon (DE3815TYBE), it has a Half-length Mini PCIe slot for WIFI Card Support.
Which wireless card I would use in this PCIe slot is part of the question, it would have to be a 2x2 streams card (maybe a 7265?), the main point is we have to:
-have it start up unattended
-be able to make it work as an access point capable of connecting a couple of ip cameras and other sensors (movement, sensors)

The 7265 card is a PCIe M.2 card. The TY NUC only has a PCIe M.1 slot. The two thus cannot be used together. The best Intel wireless card that you can use in the TY NUC is the Intel Dual Band Wireless-AC 7260.
Getting the TY NUC to start up unattended is no problem. As for software to make it an access point, I know this is available as an add-on for the Windows O/S from various 3rd-party sources (though don't ask me to quote any), but you could also look at Linux distros that have this capability built in...
