In regard to your question, maybe the LAN driver was not properly installed, or for some reason Windows is not recognizing it.
Also, remember that depending on the distance some networks might not be recognize by the NUC:
Did you try a BIOS update on the NUC? On the following link you will find the instructions to do it using the F7 method:
