What are you connecting the KY unit to? Are you sure it supports 5.1SS? Are you using an up-to-spec cable to do this connection?
I have it connected to Samsung bluray surround sound and yes the cable is up to spec. I use an xbox with hdmi also a mac mini with hdmi no problem. it wont let me configure the surround sound settings even after downloading latest drivers which other people on this forum had same issues with. installed driver shut off system completely even unplugged hdmi plugged back in nothing.
Are you using straight HDMI cable (HDMI from the unit to monitor or receiver)?
The latest driver that you have installed is the version 18.104.22.16801. Try uninstalling the driver and then reinstall it, you can download it here:
Please uninstall the old driver first before, please see Uninstalling the Intel® Graphics Driver and Intel® Display HDMI/Audio Driver
Make sure you uninstall the audio driver as well, then when you reinstall the graphics driver the audio driver will be automatic installed as well.

I have already tried everything this is really frustrating
I have both installed didn't change anything not sure what to do at this point

Well, this unit has been tested with 5.1-surround sound and it works fine, we have seen customers with similar issues and once they replace the cable for a high quality cable, it works with no problem. Even though the cable works fine with other system it does not necessary means that it will work ok on this one.
Try replacing the cable for a high quality cable if it is possible, if not it will be understandable.
Reseat the cable on both ends
Did you try uninstalling and reinstalling the driver?
Make sure you have installed the latest BIOS, please see F7 BIOS Update Instructions for Intel® NUC
Verify that HDMI audio is selected as your default playback device, to do that follow these steps:
- In the Windows* taskbar, right-click the Speaker icon.
- Select Playback device
- Check the Playback devices listed to make sure that HDMI audio is set as the Default Device. Right-click the device and select Set as Default Device. Click OK.
i have tried everything and even looked on forums to get 5.1 surround sound working but had no luck. Uninstalled audio drivers and graphics driver. Did the latest hdmi 2.0 driver update which installed audio driver automatically nothing helped yet. Downloaded Realtek audio and done almost everything possible only option I'm getting is stereo speaker settings nothing else.

Realtek doesn't matter, that's only for the 3.5mm port. All audio is pushed through HDMI/DP if you're connecting via that, which you are.
already tried everything and tried trouble shooting steps over the phone with intel also nothing has been solved or fixed yet
