You should be able to upgrade it, I don’t see why not, I have not done it personally but if somebody else has done it, it will be great if the information can be shared here.
In addition, I suggest you to ask the ubuntu community, as they will be able to assist you as well.
hmmm... I'm not sure that it works. Depending on used type of stick (mainly the WLAN/BT driver from some variants are not supported and can't work after update).

You are right on that and actually the Intel® Compute Stick STCK1A32WFC was made to work specially with Windows® and not with Ubuntu, the version that comes with Ubuntu is the Intel Compute Stick STCK1A8LFC has Ubuntu 14.04 LTS 64-bit pre-installed with all necessary drivers.
You might be able to install Ubuntu on the Intel® Compute Stick STCK1A32WFC but it will not work as it should.
With the Intel Compute Stick STCK1A8LFC, I can see that customers have installed Linuxium but we don’t have any reports of any other upgrade.

independent from supported OS or not. I use the Stick with openSUSE Tumbleweed (Secured) on the internal 32GB microSD-Card. This works, after short trouble during the BIOS update to 0031 fine on the STCK1A32WFC. Only not so nice thing, is that the selection of Windows 10 and Tumbleweed must be done as supported OS in the BIOS settings!
So normally I don't use the integrated WLAN and BT, but for testing I installed the kernel developer packages and the driver from git:

So far the operating system that Intel has validated are on the link that is posted above, any other operating system we cannot guarantee full functionality but I don’t see the reason why they will not work in your system as operating system like Ubuntu and Ubuntu flavors work pretty much in any system.
I am using Ubuntu 16.04 64bit with the STK1AW32SC. BIOS set to either 64bit windows or Android mode (bios 29). All hardware appears to work fine.
