I tried this before posting my question above, but did it again for the sake of it. I even did it with a 3rd party uninstall tool that removes all remnants of the program (registry, etc ...) and re-installed the remote keyboard app. But didn't see a difference. I still have the exact same problem.

Today I was testing the Intel® Remote Keyboard and I was able to use the phone and see the mouse cursor without any issue.
I tested iPhone and Android and both worked ok. Do you have the latest bios version?
Do you have your Intel® Compute stick model number? Is it Windows up to date?
