All the NUC does is expose the data in the EDID information block returned by the device. I suggest you contact the manufacturer for next-steps...
The new firmware complies with both DisplayPort Format Converters. Please take a look on below links:

I'm not sure what to do with your answer. Saying "it complies" doesn't actually solve the problem that we can't install the HDMI 2.0 update.
No matter what I do, I get and error, "Product ID error! Please check your firmware!", after clicking on the "Update Firmware" button of the utility.
In my case, I've connected my NUC6i7KYK to an older, non-HDMI 2.0, screen so also get the "IOU" error before getting the firmware upgrading dialog.
Please advise what to do to get the firmware to install.

The HDMI 2.0 firmware installer detects the system's current version and installs firmware necessary for the specific device plugged.
If your TV or A/V is not prepared for HDMI 2.0, the application will not install the firmware update; the error message: “OUI mismatch” refers to this.
The firmware update requires to plug only 1 monitor to the HDMI port, no adapters (straight cable); disconnect any device plugged to the miniDP and Thunderbolt.
