Intel has not validated Linux Mint with the Intel® NUC6i5SYK, but we have customers that has reported positive experience when install Linux*. At this point I strongly recommend following fugounashi suggestions, you can download the latest bios version at the following link:

Other than this little issue I've been loving my NUC. Great piece of hardware for an affordable price!
Please try the following:
- Turn off the unit
- When the Intel® NUC is off, press and hold the power button for approximately 3 seconds and then release it. The Power Button menu should appear.
- Press F2 to enter Intel® Visual Bios.
- Press F9 to restore BIOS factory default values.
- Press F10 to save and exit Intel Visual BIOS.
If the troubleshooting above does not work, please do a BIOS recovery to the same bios version you installed.

Sorry for the delay in answering.
I ended up trying all the different versions of BIOS for Skylake but none were updating...
I tried from a USB and from directory /boot/efi/EFI.
Before attempting the method whereby the jumper needs to be removed I noticed the version 0045 came out.
So I tried this one from the USB stick using F7 and it worked as a charm!!
My problem is solved, the NUC shuts down properly now!
