The Intel Driver Update utility does not support all drivers. You need to go to the downloads page for your NUC (here: NUC5PPYH Drivers & Software) and download and manually install the remainder of the necessary drivers.
Here is a list of the drivers you should have installed.
Wireless: Intel® Wireless Technology-Based Driver for Intel® NUC
Chipset: Intel® Chipset Device Software for Intel® NUC
Audio: Realtek* ALC Audio Driver for Intel® NUC
Graphics: Intel® HD Graphics Driver for Windows 7*/8.1* for NUC5[x]PY
Bluetooth: Intel® Bluetooth drivers for Windows 7*/8*/8.1* for Intel® NUC
Serial IO: Intel® Serial IO Driver for Windows 8.1*
LAN: Realtek* LAN Driver for Windows 8.1 for NUC5[x]PYH
Infrared: ITE Tech* Consumer Infrared (CIR) Driver for Windows 8.1* for Intel® NUC
Optionally, depending upon your usage, you may want to install these:
Intel® TXE: Intel® Trusted Execution Engine Driver for NUC5PGY/NUC5[x]PY
Intel® Ready Mode Technology for Intel® NUC
NFC: Near Field Communication GPIO Driver for Windows 8.1* for NUC5[x]PY

Just bear in mind that Linux Mint has not been validated to work with this NUC, see here for the Supported Operating Systems for Intel® NUC Products. If you have any trouble with your NUC and Linux Mint I would recommend heading to https://forums.linuxmint.com/.
