Same issue here with the Microsoft Designer desktop set.
My NUC reseller recommened to re-install Windows 10
Plus a few tweaks while installing the BTdriver.
Then it worked OK again (one week now)

MartinChatfield, please try the following;
- Run the Windows Updates, make sure that you can get the latest build version.
- Try installing the following driver Download Intel® PROSet/Wireless Software for Bluetooth® technology for Windows® 10.
- Follow the Troubleshooting wireless and Bluetooth® issues in this link Support Troubleshooting | Microsoft Hardware.
I did all those things, no change.
The latest BIOS (53) seems to have fixed the problem, no lockups for 24 hours.
In case the problem comes back, I find reliability of Bluetooth keyboard/mouse on various NUCs is improved if I change from a default setting. In Device Manager-Bluetooth-Intel Wireless Bluetooth-Properties-Power Management tab, I remove the checkmark from box marked Allow the computer to turn off this device to save power.
I unticked 'Allow the computer to turn off this device to save power' at the same time as the BIOS update so maybe that fixed the problem. It's still working so I'm not going to change anything just yet.
Maybe one day the Bluetooth keyboard will work in the BIOS and for wake from sleep, I can wait for that.
