Try uninstalling the IRSTe and reinstall it, restart the system when you uninstall it and then reinstall it.
Make sure you have the chipset driver installed.

Thank you for your help, tried the good old uninstall & reinstall reboot etc. Made no difference and I always Install the corresponding chipset driver first.
Also the link that you provided is for drivers versions dated Nov 2012.
I have been testing using these drivers etc - Intel C224 Drivers & Software
Should I be using the much older 2012 versions ?
After further review, the RSTe provides support for the Intel(R) C600/C610/C222/C224/C226 chipsets and your motherboard chipset is Intel® H81, you can see at your motherboard website that your motherboard supports Intel® Rapid Storage Technology and not Intel® Rapid Storage Technology Enterprise.

Try downloading and installing this version Intel® Rapid Storage Technology
Make sure you uninstalled the IRSTe first.

I any event I have found the culprit, it is the ASPEED Onboard Graphics driver. No matter which version driver I use, once installed the Intel RSTe GUI will not display fully.
If I use the generic windows display driver the Intel RSTe displays fully.
Just on a side note I also use this same motherboard in both SBS2011 & Server 2012R2 machines with the ASPEED driver installed & the Intel RSTe displays normally.
It would seem it's just in windows 7 that the problems occurs.
So I will just be running a basic nVidia graphics card to over come the problem.
