Angry Birds updates

Just curious but it seems like there are updates every few days for Angry Birds and Angry Birds Seasons. I have completed both with three stars so haven't gone back to play again yet. So can someone tell me what exactly the updates do to the games? I keep up with them when the updates are available but do not know what they are for.
